Also the worse fat is polyunsaturated fat, especially when you heat it as it's the most unstable and causes the most oxidative stress.

I can't say you're entirely wrong but I don't think you're quite entirely right either. I mean for example, insulin doesn't 'overly' lower your blood glucose levels, it merely puts it back to the normal range (say around 4 to 5.5 or so). It doesn't ever make it go 'too' low, because the liver would detect this and release glucose into the blood as a safeguard against it.

Also, in a person with no diabetes, even a carb heavy meal will not spike blood glucose much more than a low carb meal, plus the blood will quickly return to the normal level.

Buy yourself a cheap blood tester and strips, and see for yourself. Test before a meal, and at two hours after. With low and high carb. You might be surprised at how little difference there is, in a healthy person.

Yeah genetics has a lot to do with it, some people are much more carb adapted and can get away with high carb meals.

Anyone without diabetes should be able to eat carb heavy meals and their pancreas will simply release sufficient insulin to sort it out quickly.

In a diabetic or pre-diabetic person, either the pancreas is worn out, and/or they are insulin resistant. So either the pancreas doesn't release enough insulin, or it does, but the body doesn't use it effectively.

Needless to say, plenty of fat people are not (yet) diabetic. They aren't fat because of insulin, they're fat because of how the body stores the high carb diets we're told are healthy. The reason people in the past were mostly slim was they ate high fat diets, before the 'low fat, lean meat' fad took over.
